Fufu-Windbeutel

Dieses Rezept ist glutenfrei!

Klassische Deutsche Küche mit exotischem Mehl!
Fufu-Mehl eignet sich hervoragend für Brandteigrezepte – zum Beispiel für
Windbeutel mit süßen oder herzhaften Cremes gefüllt. Perfekte Vorspeise und
Dessert.

 

 

 

Zutaten Fufu-Grundteig:

250 ml Wasser,
1 Prise Salz,
50g Butter,
140 g Fufumehl,
1 TL Backpulver
4 Eier

Zubereitung Grundteig:

Wasser, Butter, Salz in einem engen Topf zum Kochen bringen,
Fufumehl auf einmal in den Topf schütten und schnell glatt rühren, bis sich ein
Kloß bildet. Diesen Kloß bei mäßiger Hitze ein paar Minuten nun ständig wenden,
bis sich auf dem Topfboden eine Teighaut bildet, sie darf aber nicht anbrennen.
Topf vom Herd nehmen, kurz etwas abkühlen lassen. 4 ganze Eier  dazu geben
und mit dem Mixer so lange einrühren, bis eine feste glänzende Masse entsteht.
Fertig ist der Grundteig!

Aus dem erkalteten Grundteig walnussgroße Häufchen abstechen, auf Backpapier setzen und
im vorgeheizten Backofen bei ca. 200° ungefähr 10 � 12 Minuten goldgelb backen,
Ofen nicht zwischendurch öffnen!

Die Windbeutel kann man süß, z.B. mit Erdbeersahne (siehe Foto) füllen und mit
Puderzucker bestäuben. Aber auch mit salziger Käsecremefüllung oder mit
Meerrettichsahne gefüllt schmecken die Fufu-Windbeutel ausgezeichnet.
