Fufu ist ein traditionelles Gericht in den meisten
afrikanischen Staaten. Es wird meist aus Maniok / Cassava und/oder Yams zusammen
mit Kochbanane, manchmal auch mit Mais oder Kartoffeln hergestellt. Man zerkocht
die Zutaten und stampft sie zu einem zähen, dicken Brei. Alternativ kann auch
ein Mixer statt des Stampfers wertvolle Hilfe leisten. Aus dem klebrigen Brei
werden dann Bällchen geformt, die man zu verschiedenen Saucen mit den Fingern
verspeist.
Da die einzelnen Zutaten nicht so ohne weiteres erhältlich
sind, empfiehlt sich die europäische Variante: Fufu gibt’s als fertigen Mehlmix
zu kaufen, z.B. „Mama’s Choice Fufu mix“ (glutenfrei). Diese Mehlmischung
enthält Cocoyam (Elefantenohr Pflanze / Yams) und Cassava. Die Herstellung der
afrikanischen Nationalspeise ist einfach: 2 Teile Wasser zum Kochen bringen, ein
Teil Fufu mix unterrühren und köcheln lassen, dabei ständig umrühren, da der
Teig schnell anbrennt. Anders als die Frischware kann der Mehlmix natürlich
schön portioniert werden, das Mehl hält sich viele Monate lang in der
Verpackung.
Aus dem Fufu – Mix Mehl lassen sich aber auch ganz viele
köstliche „deutsche“ Gerichte zaubern, z.B. Apfelküchle im Fufu-Bierteig,
Fufu-Backspätzle als Suppeneinlage, Fufu-Käse-Eclairs, Gnocchi und sogar
Windbeutel! Ausgangsbasis ist immer ein Fufu-Brandteig, der blitzschnell
herzustellen ist. Je nach Gericht wird er dann weiter
verarbeitet.
Fufu-Brandteig (Grundteig) Grundrezept:
250 ml Wasser, 1 Prise Salz,
50g Butter, 140 g Fufumehl,
1 TL Backpulver,
4 Eier
Wasser, Butter, Salz in einem engen Topf zum Kochen bringen,
Fufumehl auf einmal in den Topf schütten und schnell glatt rühren, bis sich ein
Kloß bildet. Diesen Kloß bei mäßiger Hitze ein paar Minuten nun ständig wenden,
bis sich auf dem Topfboden eine Teighaut bildet, sie darf aber nicht anbrennen.
Topf vom Herd nehmen, kurz etwas abkühlen lassen. 4 ganze Eier dazu geben
und mit dem Mixer so lange einrühren, bis eine feste glänzende Masse entsteht.
Fertig ist der Grundteig!
